Stream 7 is pumped via a centrifugal pump, P107, through to the clarifier, L001. L001 is present to remove any of the non-diluted molasses and therefore ensure the uniformity of the flow. Uniformity in the flow is desired as to enable the steriliser, S001,
to be able to perform optimally.

Any removed molasses are then returned to M001 through R1. The flow rate of R1 is assumed to off a low enough value as to be negligible and not change the flow rate between stream 7 and stream 8. Therefore the flow rate at stream 8 is assumed to be 2.25m3/hr.
The temperatures of these flows have not been influenced by the processes thus far and as such are assumed to be, on average, 15°C.

The flow pipe, stream 8, leads into the continuous steriliser, S001. This means that the feed into the steriliser is assumed to be in the range of 15°C and at a rate of or 2.25m3/hr. The purpose of S001 is to make sure that the substrate enters
the fermentation stage under sterile conditions.

The need for this process is to restrict any competing growth occurring at fermentation, as this growth would decrease the yield of desired product as well as offer a potential source of contamination to a product which is being produced for human consumption.

To achieve this, the design of the steriliser is based upon the requirements needed to kill the most thermally resistant bacteria present in the molasses. This resulted in the design being based upon the bacteria
Bacillus stearothermophilus

Due to the de-activation kinetics of B. stearothermophilus the medium is required to be heated up to 120°C and kept at this temperature for 3.3 minutes. Therefore the steam entering through the stream 9 is at 120°C. This is directed to the steam
injection valve, VV1, where the steam comes in direct contact with the molasses.

At this point the steam condenses into the molasses raising the temperature to the desired value of 120°C for the flow traveling through S001. This holds the flow for the 3.3 minutes required to sterilize the medium. The medium then flows to the expansion
chamber, E001, where the steam is evaporated off by reducing the pressure of the flow.

This in turn brings the temperature of the molasses flow down to 30°C in stream 10 entering the substrate storage tank, T004. The flow exiting the steriliser process is then maintained at 2.25m3/hr and is present at 30°C. This flows, via stream
10, to the sterile holding tank, T004.
