The continuous injector flash cooler is illustrated in Fig.4 and consists of a steam injector which directly injects steam into the non-sterile medium. The holding section is to maintain the medium at a required temperature and then the hot medium is passed
through a flash cooler resulting in its virtually instantaneous cooling.

The advantages of the sterilizer with injector are:

• Shorter heating and cooling periods.
• Lower capital cost.
• Easier cleaning and maintenance.
• Higher steam utilization efficiency.

Optimal sterilization results will peak when the sterilisation temperature is attained with a minimal time exposure. In this case, continuous steam injector steriliser is the best viable option. This is because with a continuous steam injector sterilisers
the heating and cooling periods achievable are so rapid.

2.3 Fermentation

The fermentation is at the heart of the process, as this is the location where the money is made. This means that the design procedure chosen here is very important as it will influence the design of all the surrounding elements, thereby making sure the
right design is chosen here is paramount.

One of the biggest choices of this system for the fermentor is whether to run it as a fully batch or semi-batch system. A fully batch system is rarely used in the bioprocesses industry. This is because of the high conversion for undesired side reactions
(Korovessi E and Linninger A.A, 2006). In this case the most common and problematic side reaction is the production of ethanol. The production of ethanol is caused by the substrate being in excess at the start of the fermentation
